Tortellini Salad

Well here is the first recipe!

Two packages of frozen tortellini - Cook just until tortellini float, no longer
1/2 cup of mayo
1 bottle/can of quartered artichoke hearts - drained
1 can of diced olives - drained
6-8 cloves of garlic (depending on how much you like garlic)
1/2 bag of spinach - sauteed
1/2 cup grated parmesan cheese
1/2 cup grated romano cheese
1 Tbsp of italian seasoning
salt to liking
chili pepper to liking
1/2 cup high quality italian dressing

Cook tortellini, rinse with cold water or let sit in frig until cool, mix with all ingredients except italian dressing, let sit overnight, right before you are about to partake of the yumminess add the italian dressing so it isn't too dry. You can other things if it sounds good to you or don't put stuff in if you don't like it. ENJOY!
